Ingredients (4/6 servings)
3 large zucchini/courgettes
spinach 400 g
a bit of butter (about 15/20 g)
pine nuts 65 g
3 chopped shallots
4 tbsps of extra virgin olive oil
beef mince 130 g
finely chopped ham 130 g
ricotta 300 g
grated parmesan cheese 100 g
salt
pepper.
Preparation
Preheat the oven to 180 degrees. Wash and cut the
zucchini in half lengthwise, scoop out the centre using a spoon and keep it for
later. Steam cook the zucchini for 7 minutes. Wash the spinach, and fry it
gently in a pan with the butter for 10 minutes.
Put the spinach into a blender and blend it with the
pine nuts.
Heat a table spoon of oil in another pan and fry the
chopped shallots. Add the meat mince and the chopped ham and cook for another 5
minutes on a low heat.
Mix the ricotta with 70 g of parmesan cheese, the
blended spinach and the meat, season with salt and pepper.
Stuff the zucchini with the filling and put them on an
oven tray previously lined with oven parchment, sprinkle with the rest of the
parmesan cheese and some oil.
Put the zucchini into the oven, cook for about 25
minutes and grill them for another 5 minutes.
